Course 1: Chilled oysters with pickled rhubarb, salmon roe and chrispy shallot

Course 2: Salt baked prawns, radishes, snap peas, marcona almonds, chimichurri piment d’Espelette

Course 3: Raviolo, dungeness crab, ramps, meyor lemon, tarragon

Course 4: Olive oil poached halibut, fennel, wild onions, wild watercress, fennel-arugula broth

Course 5: Goat cheese cheesecake, strawberries, almonds, aged balsamic
